I regret that I don’t have pictures because it was a thing of beauty. But I lack both a grill and a place to grill so I was over at a friends for this phenomenon and without my camera.
The wordsmiths among you will notice that I titled this post ‘Grill Salad’ rather than ‘Grilled Salad.’ The use of the imperative over the participle is intentional. It is a command, or a least a very emphatic suggestion. If you have a grill. If you have vegetables. You should make a grilled salad. Probably right now.
You want a hot grill so go ahead and do this last, right before you serve the meal.
Prep: Take heads of your favorite salad greens (frisée, radicchio, romaine) cut them in half. Coat the cut side with olive oil salt and pepper.
Cooking: Put the cut side on the grill. Put the lid on the grill. Steam for 2-3 minutes (a little longer for something solid like radicchio). You want grill marks and the floppiness of an unmastered Muppet.
Finishing: Rough chop the greens so they are in salad size pieces. Toss with a scant amount of your favorite dressing or a little more EVOO, S+P. Add anything else you like in your salad – nuts, fruits, cheese, etc. (grilled or otherwise). Devour.
Endless variations. All good. An awesome summer meal.
